This dish is the ultimate beer dish. Because you can use many types of beer in this dish, to make a good and unique Chili Con Carne. Of course, a dark beer works best, as it naturally fits the spicy notes of the dish best. But a lighter lager, even a pale ale - would also be a sensible choice (you should always use a Skovlyst - Bøgebryg, or a Newcastle - Brown Ale).
Here is our recipe for a good round of Chili Con Carne:
This recipe is a large portion for about 4-6 people.
(approx. 1 - 1 ½ hours)
800 grams minced beef
2 large onions - diced
3 cloves garlic - finely chopped
3 cans chopped tomatoes
1 small can of tomato paste
1 can of red kidney beans
1 can of beer - e.g. Evil Twin NYC - Greenhouse Dunkel (a Munich Dunkel), or Enegren - Nighthawk (a Black Lager). Or a similar beer of approx. 44-50 cl.
1 fresh red chili, finely chopped and seeds removed (keep the seeds if you want a stronger chili con carne and use 2 chilies if necessary).
1 teaspoon cumin
1 teaspoon onion powder (can be omitted)
1 teaspoon garlic powder (can be omitted)
½ fresh cinnamon stick
25 gr. good dark chocolate
salt and pepper
Worship:
Sauté the onion and garlic in a little oil in a large pan. Add the tomato paste.
Add the minced meat and brown it well. Add the spices and then the chopped tomatoes.
Pour in the beer and cinnamon stick and let the dish simmer for about an hour. Save a sip for the cook.
Add beans after an hour, as well as chocolate and let it simmer for another 15-20 minutes.
Serve with freshly cooked rice, sliced avocado, sour cream and tortilla chips.
