The Process: Five years resting in oak whiskey barrels before blending with fresh beer and cellaring for another year in stainless steel.
The Result: ‘Six Years’ Time’ is an Old Ale, dark brewing malts and barrel ageing provide flavours of toasted wood, toffee, and caramel; while a range of wild bacteria create a moderately tart, appealingly acidic finish.
