Hummus, what is it?

BrygBrygBryg is the name of one of the most creative and innovative breweries in Denmark. Although the two gentlemen, Mikkel and Kenneth who run the brewery, would probably just call themselves simple craft brewers. There is no big gesture in their manner, but their beer is anything but conventional. Because as Mikkel himself said when I was down to visit them in their basement brewery in Skovlunde just outside Copenhagen, "hops, what is that?". It was of course said with a twinkle in the eye, because of course they brew with hops, but not in their sours. Hops are just not a main ingredient, as it is for many other breweries.

I asked a bit cheekily. "Are you never going to brew an IPA?". I knew the answer. Mikkel said "Never - I have no idea how to do it". But also said that there were so many talented IPA brewers here, so let them do what they are good at, and then we will do the other thing. And they do that to a great extent.

When you're at BrygBrygBryg you know you're in a special place. There's stuff and bubbles in buckets, tanks, and barrels. They're best known for sours, but they've also brewed a few dark beers, and right now they were working on a couple of saisons. What they all have in common is their approach to brewing beer. It should be inventive, challenging, and above all, fun.

Are all of BrygBrygBryg's beers appealing to everyone? No. They have some beers that almost everyone would like, and then a whole bunch that maybe very few people like. That's what makes them exciting, and in my opinion one of Denmark's best breweries.

BrygBrygBryg makes good food beers. There's a lot of sourness in their beer, and it's a natural counterpoint to something salty. I could imagine a not-too-fruity sour for a round of Moules Frites (mussels with fries) and a little aioli for maybe. In addition, they often have spices, special flowers or the like in their beer, which go well with many different dishes. Here it's like with BrygBrygBryg itself, only your imagination sets the limits. So be creative in the kitchen.

Boogieman - A Belgian-inspired quadrupel with chili, ginger, pumpkin and carrot. It burns pleasantly and is, in my opinion, a really good introduction to BrygBrygBryg's slightly twisted universe. You have to like chili, though, because it can bite a little.

Hva-Sar-Tan - A spicy saison with winter sar.

What the two beers have in common is that by scanning a QR code on the bottle you get access to a music video that you MUST watch while drinking the beers.

Lemon Drip and Date Drip are two sours with lemon drop chili and with dates, respectively.

Simone is a power sour with pineapple and cinnamon, fermented on pineapple.

Finally, there is Krig, which is a mature cherry sour.

I highly recommend checking out BrygBrygBryg, especially if you want to try something that's not like everything else.
